In a sea of bazaar offerings and weekend gourmet markets during the ‘ber’ months, one of the foods to watch right now in time for the holiday season (believe us, these four months will be a flash) are whoopie pies.
The taste of a chewy cookie, flavorful fillings, and addicting bite-size goodness—that’s Cookie Lab’s Whoopie pie, concocted by cousins Ethne Barlin and Stanley Tan. According to these pastry experts, if you google whoopie pie, it will be described as: a hybrid of desserts—a cupcake, a cookie and a cake. New York Times writer, Michele Maynard wrote “The closest description may be a cake-like sandwich or sandwich-like cake”.
The owners share, “Whoopie pie can be a snack or a dessert. You can eat it with milk, tea, coffee, juice, soda or plain water. We have eight flavors namely, Carrots, Choco Banana, Choco Mint, Classic, Oatmeal Peanut Butter, Red Velvet with Cream Cheese, Red Velvet with Yema, and Wintermelon Milk Tea. We are still coming up with more flavors for both pies and fillings. For special orders, we can customize the pies. Clients can mix and match the pies and the filling we are currently offering and can even come up with their own flavors.”
Quality and consistency are Barlin and Tan’s top priority, thus they only cook in small batches. They do not skimp on their ingredients and the brand they use. A whoopie pie does fill an empty stomach and as it is very massive and leaves no room for air filled by every ingredient: bananas, carrots, chocolates, peanuts, and fillings from flavored cream cheese, dolce de leche, yema, to mallow fluff.
Something to watch for is Ethne and Stanley’s dream to put up a cookie lab cafe that will let their customers create their own pies to their heart’s desire.
